Ingredients You Will Need

1 cup raw cashews
1 cup pitted Medjool dates
1 cup shreed unsweetend coconut
Zest of 1 lemon
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
Pinch of sea salt
Optional: 2 tablespoons shredded coconut for rolling
Step-by-Step Preparation
Follow these simple steps to make your lemon and cashew balls:
Soften the dates
If your dates are dry, soak them in warm water for 10 minutes, then drain. This helps them blend smoothly. If there are juicy and plump you can skip this part.
Process cashews
Place cashews and coconut in a food processor and pulse until finely ground but not turning into butter.
Add dates and lemon
Add the softened dates, lemon zest, lemon juice, vanilla extract, and salt to the processor. Blend until the mixture sticks together in a dough-like ball.
Form the balls
Scoop out small portions and roll them between your palms to form balls about 1 inch in diameter. I like to use an ice cream scoop so they're nice and even.
Optional coating
Roll the balls in shredded coconut if you like a bit of texture and extra flavor.
Chill
Place the balls in the fridge for at least 30 minutes to firm up before serving.
