Delicious No Bake Lemon and Cashew Balls Recipe for a Healthy Treat

If you are looking for a natural sweet recipe that is quick, easy, and healthy, no bake lemon, coconut and cashew balls are a perfect choice. These little bites combine the fresh tang of lemon with the creamy richness of cashews, creating a refreshing and satisfying snack. They require no oven time, making them ideal for busy days or when you want a guilt-free treat without fuss.

I made these balls for a recent retreat that i catered for, and during a Reiki Training I hosted and I was told I had to post the recipe.

Why Choose No Bake Lemon and Cashew Balls?

Feeling pissed off with the world? Need some sweetness to nourish your soul? Then these Lemon Bombshells are the thing to bring some brightness to your life. And your kids will love them too.

These lemon and cashew balls are naturally sweetened, avoiding refined sugars and artificial additives. Cashews provide healthy fats and protein, while lemon adds a burst of vitamin C and a bright flavor that balances the richness.

Plus, they store well in the fridge or freezer, so you can prepare a batch ahead and enjoy them anytime.

Ingredients You Will Need

The ingredient list is short and straightforward. Here’s what you need for about 12 balls:

  • 1 cup raw cashews

  • 1 cup pitted Medjool dates

  • 1 cup shreed unsweetend coconut

  • Zest of 1 lemon

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • Optional: 2 tablespoons shredded coconut for rolling

Step-by-Step Preparation

Follow these simple steps to make your lemon and cashew balls:

  1. Soften the dates

If your dates are dry, soak them in warm water for 10 minutes, then drain. This helps them blend smoothly. If there are juicy and plump you can skip this part.

  1. Process cashews

Place cashews and coconut in a food processor and pulse until finely ground but not turning into butter.

  1. Add dates and lemon

Add the softened dates, lemon zest, lemon juice, vanilla extract, and salt to the processor. Blend until the mixture sticks together in a dough-like ball.

  1. Form the balls

Scoop out small portions and roll them between your palms to form balls about 1 inch in diameter. I like to use an ice cream scoop so they're nice and even.

  1. Optional coating

Roll the balls in shredded coconut if you like a bit of texture and extra flavor.

  1. Chill

Place the balls in the fridge for at least 30 minutes to firm up before serving.
